Sweet Potato Muffins (DF, GF)

 1 Large Sweet Potato
 ½ cup Olive Oil
 ½ cup Almond Milk
 ¾ cup Maple Syrup or Equivalent Maple Sugar
 1 tsp Vanilla Extract
 2 cups GF Flour, Oat Flour, or Rice (if flour doesn't ahve xanthan gum, add 1 teaspoon)
 2 tsp Baking Powder
 2 tsp Baking Soda
 1 ½ tbsp Chinese 5 Spice Powder

Preheat oven to 400 deg F. First boil the sweet potato (skin removed either
before or after cooking). Mash it with a fork after it has cooled. Combine olive oil,
maple syrup, and vanilla in a bowl. In a separate bowl, combine the flour, baking
soda, baking powder, and 5 spice powder. Fold dry ingredients into the wet. Line
12 cup muffin pan with cups and fill. Use toothpick to check. Bake 20 to 25
minutes.
