Sweet Potato Sauté

 6 Sweet Potatoes, Peeling in 1' Chunks
 1 Heaping Table Spoon of Ghee
 ¼ cup Maple Syrup
 1 tsp Cardamom and a Few Shakes of Cinnamon
 ½ tsp Ground Ginger

Put all ingredients in a medium pot. Saute a few minutes to mix spices together. Cover and cook for 20 minutes. Stir occasionally.

**** You can also BOIL the sweet potatoes, transfer to a fry pan, then mix the spices up and saute. You can also OMIT the maple syrup. Add a dash. They will still taste sweet with less sugar and calories!!!
