1 tbsp Olive Oil
½ cup Minced Shallots
3 Cloves of Garlic
1 ½ cups Chopped Carrots
2 cups Vegetable Broth
⅛ tsp Pepper

Add oil to pan and cook the garlic and shallots. Add carrots and broth and seasonings. Bring to a boil. Simmer til carrots are soft. Puree the carrots with an immersion blender or use a food processor to puree.
